Vanilla Cupcakes With Blueberry Filling

Oops, I did it again ...

... second time in a week because these Vanilla Cupcakes are SO good. :) This round, just for fun, I swirled some blueberry sauce in. Verdict? I still prefer plain. My daughter and helper, though, really liked this version. Not surprising, since they thoroughly enjoyed the cream cheese/blueberry combo I made for Atayef.

Right now, I am looking for a light, not-too-buttery frosting to pair with these delightful cupcakes, and I have been told I should go with swiss meringue buttercream. So yes, that's on my to-do list. Wish me luck!

  4. I used blueberry SMBC on my magnolia cupcakes once. Go with the reduced butter recipe, as the typical SMBC recipe will taste like pure butter. Cooked frosting also goes well on cupcakes, or you can try meringue based frosting (butter free!).

    i read that you have reduced the sugar required to 170g.do u think it can be reduced further? i am tempted to make this cake but was "scared" by the amt of sugar needed... thks

  7. octopusmum: Keep in mind that sugar acts as a tenderiser. So reducing it will affect the texture of a cake. Having said that, I *think* you can probably can go down to 150g?
